100% Tempranillo/La Rioja: Environmentally integrated agriculture. Employing viticulture that respects the
biorhythms of the plant and vineyard. Strict selection during hand picking at harvest. Grapes are stored in small boxes. Calcareous, sandy, red clay soils. Destemmed by hand, berry by berry, with a rigorous selection of every grape. Cold maceration pre-fermentation. Fermentation in 1000L open top oak vats with selected indigenous yeast. Total maceration is 21 days. 18 months in new French & Central European bordelaise oak barrels. We visited the winery & know the owner.
